COURSE INFORMATION
Many chefs in the sector have been promoted t on the basis of their experience but without formal qualifications. This PDA will allow you to gain key skills at a high level to not only enhance your skills but to allow you to support and develop others. This course will support the development of highly skilled chefs in professional kitchens.
- You will learn how to produce a range of desserts such as
- Plated desserts
- Petite gateaux
- Entremets gateaux
- Miniatures
- Marzipan models
- Pastillage displays
- Chocolate bonbons
- Petit fours and simple showpieces using chocolate, boiled sugar and/or isomalt.
- 1 year - one afternoon and evening per-week.
- Professional cookery practical and knowledge, food hygiene.
- SCQF Level 6 qualification in a relevant are or relevant industry experience
- HNC Professional Cookery
- HNC Professional Cookery with Patesserie
- Pastry Chef
- Head Chef
- Sous Chef
- Cost £720 however you may be eligible for partial funding through a Part time Fee Grant from SAAS should you meet the eligibility criteria.
