My name is Courtney Marshall, I’m from England and currently studying HNC Patisserie.
I started at Fife College in 2020 during lockdown with a Level 5 Bakery course. Juggling that course during lockdown was pretty hard but I managed to get through it. I then completed a Level 6 Patisserie course and that was really interesting, a big level up from bakery. And now I do HNC Patisserie, and hopefully next year I'll be going on to the HND Patisserie at Glasgow College.
I most enjoy the baking process. We’re doing patisserie and making things such as fine pastries, which I also enjoy. I came into this course wanting to be a baker and open up my own bakery but now I want to be a pastry chef which is a really big change. The lecturers have been amazing, I get along with them all and they are very helpful.
